Project overview

Dan Dan London Bridge marks the third project in Hewn’s ongoing collaboration with the restaurant brand. Building on the material language of its first two locations, the design refines core elements of Dan Dan’s visual identity to respond to a new set of operational and contextual demands. Intelligent reuse, targeted interventions, and thoughtful material choice produced a sophisticated and operationally precise iteration of the brand within a constrained shell and to a carefully managed budget, setting a strong commercial precedent for future locations.

Materiality

The design consciously explores and refines Dan Dan’s established visual and spatial language, returning familiar elements with clarity and intent. A warm, carefully balanced palette of red metro tiles, soft upholstery and natural light creates a dining space that feels both intimate and open. Bamboo pendants cast a familiar glow over timber tables and tiled surfaces, while Dan Dan’s signature red neon forms a bold graphic anchor. At the heart of the plan, an open noodle kitchen framed by a curved white-tiled counter brings the craft and rhythm of cooking into clear view, shaping a dynamic and engaging guest experience.

Sustainability

Treating the existing shell as a resource rather than a constraint allowed Hewn to limit embodied carbon and material waste throughout the refurbishment. Existing structural elements were retained and integrated into the new layout wherever possible, extending the life of the building and reducing demolition. Carefully targeted interventions—including the selective removal of obstructions, refined circulation, and expanded glazing at the entrance—achieved significant spatial improvements with minimal construction. Materials were chosen for their durability and material integrity, supporting long-term performance and reducing the need for future replacement through thoughtful, measured design.
