Scarpetta Canary Wharf adapts a large, double-height commercial shell in a Canary Wharf tower into a richly layered dining environment. Working alongside award winning hospitality designers Mystery Group, Hewn’s design introduces a new mezzanine level to expand the footprint and create a more varied dining offer, while maintaining visual continuity across the space. The ground floor is structured around an open kitchen, bar and high-turnover seating, establishing an active and legible dining floor. Circulation and servicing are carefully coordinated to support efficient operation within a constrained and high-pressure setting. The result is a cohesive restaurant environment that responds to the demands of its context while delivering a strong and recognisable identity.




Materiality
Scarpetta’s material palette draws on the language of traditional Italian craftsmanship, reinterpreted through a contemporary hospitality setting. Timber panelling and joinery introduce warmth and rhythm across the volume, paired with leather upholstery, copper detailing and terrazzo tiles that add depth, contrast and durability within high-use areas. These elements are selected for both performance and character, reinforcing the brand’s focus on crafted, fresh food while establishing a strong visual identity suited to a high-traffic commercial environment.






Performance
Operating within a high-footfall Canary Wharf location required a layout and infrastructure capable of supporting sustained peak service. A large commercial kitchen and back-of-house are integrated with front-of-house functions to ensure efficient workflow, while catering serveries, bar areas and extract systems are positioned to support rapid turnover without disrupting the customer experience. Services are coordinated as part of the architectural language, allowing essential infrastructure to remain exposed where appropriate while maintaining a coherent and considered interior.
